The return of En Équilibre with the wonderful 2021 vintage. Pinot Noir, destemmed and foot-trodden, Fermentation in stainless steel tank over a three-week period without punchdowns nor pump-over. Aged 18 months in barrels. Bottled unfined and unfiltered, without any added sulphur.
