100% Cabernet Franc

Working with Cabernet Franc in Estrie flirts with the limits of the possible but resulted into an unique vintage. Hyper-selective sorting of the most beautiful clusters of Cabernet Franc: in 2021, like the magnificent vintage, these are very pretty, very ripe grapes that we harvested and vinified in red for the very first time! Maceration for a 15 day, followed by gentle pressing, fermentation and aging on lees in stainless steel vats. Bottled unfined and unfiltered, without any added sulphur. Very confidential production and distribution.
