Grapes harvested at full maturity in late October. Gentle direct pressing, followed by natural fermentation and 18 months of aging on lees in 400 L barrels, then 12 additional months in bottle. Each year, this Riesling becomes less of a calvaire (ordeal) to make gaining depth, minerality, and vibrant tension.
Bottled unrefined, unfiltered, and with no added sulfur.
